张瑞

张瑞,女,1991年出生,中共党员,研究生学历,博士,湖北省“楚天学者计划”楚天学子。主要从事非热提取传质和特色农副产品精深加工及综合利用等方面研究,以第一或通讯作者在Trends in Food Science & Technology, Bioresource Technology, Food & Function等国际Top期刊发表SCI论文13篇,发表中文核心期刊论文2篇。多次参加国际会议,并于第三届电穿孔和脉冲电场世界会议发表口头报告,获食品组最佳汇报奖。担任Journal of Functional Food, Critical reviews in Biotechnology等国际期刊审稿人。目前主持农产品加工与转化湖北省重点实验室开放课题1项。

研究领域:

物理场强化天然产物高效选择性传质;

功效物质化学基础及分子营养与功能评价;

富硒农副产品高值化深加工与资源综合开发。
